Pork Carnitas Recipe

Yeah, I know, tacos are probably so over and you’re on to some other new thing, but I don’t care.  This recipe is easy, although making it as well as the corn tacos, green apple salsa and pickled red onion accompaniments takes a fair amount of time.  Put some tunes on and don’t worry, it’s worth it.  Four people can absolutely stuff themselves and you still may have leftovers.  Here are the links for the green apple salsa recipe and the pickled red onion recipe that you will put on top of your pork carnitas.

You Have Been Served:
Ingredients
  • 2 ½ lbs pork butt
  • 1 tbsp vegetable oil
  • 2 tsp salt
  • 1 tsp pepper
  • ½ tsp cinnamon
  • ½ tsp chili powder
  • 2 tsp oregano
  • 1 tsp cumin
  • 5 cloves garlic, finely chopped
  • 1 onion, thinly sliced
  • 1 chipotle pepper in adobo sauce, finely chopped
  • 1 jalapeno, seeds and ribs removed, finely chopped
  • 1 bottle dark beer (341 ml or 1½ cups)
  • 1 tbsp honey
  • corn tortillas
  • green apple salsa
  • pickled red onion
  • cheddar cheese
  • sour cream
  • lime wedges
  • coarsely chopped fresh cilantro
Instructions
  1. preheat oven to 300F
  2. combine salt, pepper, cinnamon, chili powder, oregano and cumin in a small bowl
  3. rub pork on all sides with vegetable oil
  4. rub pork on all sides with spice mixture
  5. place pork in dutch oven or large casserole dish (photo 1)
  6. arrange garlic, onion, chipotle pepper and jalapeno on top of pork
  7. pour beer over pork (photo 2)
  8. bake in oven, covered, approximately 2 hours or until much of the liquid has evaporated or been absorbed, and the meat is falling apart
  9. while pork is cooking, make tortillas according to instructions on the bag of Masa corn (photo 3, 4, 5 and 6)
  10. you can roll the tortillas, but it's easier when you use a tortillas press and the tortillas turn out perfectly
  11. while the pork is cooking, make the green apple salsa and the pickled red onion
  12. add salt, pepper, hot sauce to taste
  13. remove casserole dish from oven and shred pork with two forks, cover and set aside until ready to served
  14. add desired amount of shredded pork on homemade or store bought corn tortilla, add green apple salsa, pickled red onion, shredded cheddar, sour cream, a squirt of fresh lime juice and a scattering of cilanto (photo 7)
