Green Apple Salsa Recipe
Pork and apple go together like wine and Friday night. I figured a tart and spicy green apple salsa would complement the rich, fatty and spicy pork carnitas. This recipe makes more than you will probably need for your carnitas, but leftovers are great the next day tossed into a simple arugula salad.
Green Apple Salsa Recipe
Ingredients
- 2 granny smith apples, peeled, cored and finely diced
- ½ red onion, finely diced
- ½ jalapeno pepper, seeds and ribs removed, and finely diced (or more to taste)
- juice of ½ a lime
- 1 tbsp loosely-packed fresh cilantro
- ¼ tsp salt
- several spins of the pepper mill
- 2 tbsp honey
Instructions
- combine all ingredients (photo 1)
- adjust salt, pepper and spice to taste
- let sit at room temperature for a couple of hours before serving so the flavours meld, then test for seasoning again before serving (photo 2 and 3)
- store leftovers in refrigerator
