Random Tip #1, Cooking Spray, Pantry Essentials
I’m not ashamed to say it, I use cooking spray. Nothing gets into the seams and corners of your baking pans better. Yes, butter is delicious and butter paper works too. But cooking spray is convenient, tidy and doesn’t get your fingers all greasy. Working in a restaurant means washing your hands about every five minutes; by using cooking spray I can sometimes go ten. Any excuse not to wash my hands for the millionth time in a day. Make sure you get canola oil spray not olive oil (which imparts a funny taste to baked goods) or butter spray (which doesn’t have butter at all and tastes like that fake buttery grease they use on your popcorn at the movie theatre).
