Stewed Rhubarb Recipe
- 2 lbs rhubarb
- ¼ cup juice or water
- 1 cup sugar
- drop vanilla (optional)
- red food colouring (optional)
- wash and chop rhubarb into ½" chunks (photo 1)
- add rhubarb, juice (I like cranberry, but apple or orange works as well) or water, and sugar to a medium-sized pot (photo 2)
- bring to simmer over medium heat and cook until rhubarb chunks breaks down (about 15 minutes)
- remove from heat, add a drop or two of vanilla to taste (optional)
- if the stewed rhubarb is not enticing enough on its own, you can add a few drops of red food colouring (optional)
- add additional sugar to taste
- chill
- serve plain or over ice cream or yogurt (photo 3)
