Baked Apples Recipe

Baked apples are almost as easy to make as toast.  Make sure you use a melon baller to remove the core; it’s the simplest and safest way.

Ingredients
  • 8 cooking apples (I used Gala and they worked beautifully)
  • 2 cups brown sugar
  • 2 tsp cinnamon
  • pinch of salt
  • ½ cup raisins (optional)
  • 8 heaping tsp cold butter
  • 2 cups apple juice (or water)
  • ¼ cup maple syrup
Instructions
  1. preheat the oven to 350F
  2. wash apples and remove the stems (photo 1)
  3. use a melon baller to remove the apple core being careful not to remove the bottom of the apple
  4. peel off about 1 inch of skin from the top of the apples
  5. place apples in glass baking dish, cut side up (photo 2)
  6. combine brown sugar, cinnamon, salt and raisins (if using) in a small bowl
  7. stuff the brown sugar mixture in the cavity of each apple, pressing firmly
  8. sprinkle any remaining brown sugar over the apples in the baking dish
  9. pour about 2 cups of apple juice into the baking dish
  10. top each apple with a heaping tsp-sized chunk of cold butter (photo 3)
  11. bake, uncovered, about an hour, until apples are soft and starting to burst a little bit over the top of the skins (photo 4)
  12. serve hot with ice cream and lots of the sauce drizzled over the top (photo 5)
